Just as the dawn chases the night away again each morning on its wings, so the saffron or the crocus blooms each spring on barely thawed earth, or even peeks out from under the patches of last snow. That is why, almost everywhere it grows, the saffron is a symbol of spring, of awakened life, of hope and joy. The golden yellow saffron, with its silky blossoms, is also a symbol of light and enlightenment, but also of abundance and fabulous luxury. Its relative, the true saffron, was already a symbol of wealth in antiquity, as it was used as an extremely expensive dye to dye silk in China and India, requiring up to two hundred thousand flowers per kilo of saffron stigma from which the dye was made. Although saffron has long since fallen out of use in the textile industry for dyeing fabrics, the saying “as expensive as saffron” has not faded into oblivion and is still used today.
